Alas, our farm days are over for this growing season. Our CSA farm closes up shop this week, a bit early due to the wet, wet summer; you should see the poor tomato plants. But the rain didn't ruin everything, as we have big, beautiful butternut squashes, just waiting to be cooked and gobbled up.Butternut squash is loaded with vitamin A as beta carotene, vitamin C and fiber, along with B vitamins, so you really can't lose by making the most of your winter squash.
One of our favorite dishes is a simple pizza with tomato sauce, roasted butternut squash, shallots and sage leaves, topped with prosciutto and feta cheese. How's that for a fun way to eat your squash?

Tomatoes are abundant right now -- trust me. I have three large bags full of them from our CSA Farm, and some fresh tomato sauce simmering on the stove as I type.Needless to say, I've been scouring the internet looking for some new tomato recipes to try that take advantage of the healthy tomato, bursting with vitamin C and lycopene. So I checked out the top 25 tomato recipes on Cooking Light, and what do you suppose I found?

When you were little, your mom probably made sure you got your vitamin C to help fend off those nasty bugs that float around classrooms. But recent research shows that adults have good reason to get their vitamin C as well.
At their Conference of the Council for High Blood Pressure Research, the American Heart Association revealed that vitamin C has a positive effect on blood pressure. The practical applications aren't yet known but in the study, high doses of vitamin C resulted in an average seven percent drop in blood pressure.
While it's not reasonable for you to take high doses of vitamin C like those administered in the study, you can be sure to incorporate lots of healthful foods that are rich in vitamin C. Choices include citrus fruits, broccoli, greens, and melon.

This weekend, our family went to a Mexican Fiesta party. I gotta say, not only were the food offerings delicious -- and plentiful! -- they were also healthy. From guacamole and veggies to slow-cooked beans with cilantro, there was something to satisfy every taste, and every nutritional need.My favorite had to be the Mexican chopped salad with honey lime dressing. This salad had greens, chunks and color, color, color. Everything is fresh and the balanced ingredients are oozing nutrition.
Talk about a masterpiece: romaine, black beans, corn, tomato, avocado, jicama, radishes, red pepper, and a delectable dressing, complete with fresh garlic.

Crisp, sweet, refreshing... that's how I describe raw fennel bulbs. I love using raw fennel in salads, and paired with red pepper, the crunchy veggie feast is delectable.What's so healthy about a Red Pepper and Fennel Bulb Salad? First off, it is rich in vitamin C and minerals. Add low calorie, high fiber, and B vitamins to the mix and you're on your way to a Super Food lunch.
This particular recipe also has loads of calcium, from the fennel and sesame seeds. The only dressing is a little soy sauce and vegetable oil (I'd choose extra virgin olive oil, maybe even some flax oil, with a titch of sesame oil for flavor), so you've got no empty calories coming from the dressing.
