Mmmmmm. Just the mention of Chef Jens Dahlmanns's name puts my mind in ecstasy. His is the name of the man who created what I'd choose as my 'last meal.' He's the premier Chef of Disney's signature restaurant The California Grill, who also oversees a staff of award-winning chefs atop Disney's Contemporary Resort. Chef Jens was classically trained in European kitchens and worked for Le Cirque 2000 in New York City and Cafe 'L Europe in Palm Beach, Florida, before joining Disney in April 2004.

We first spoke on the phone a week before I was to dine at his spectacular grill. From a fitness trainer standpoint, he gave all of the 'right answers.' Not that he was contrived, but his stance on cooking is what I would wish to hear. If you've read my features before, you'll know that I preach the importance of lean fresh foods. Read on to see how dead-on Chef Jens is to that style of eating. From a regular gal's point of view, it was just really exciting and fun to hear Chef Jens talk about food. He described white asparagus the same way most men would describe a beautiful woman. I could imagine what each item tasted like as he described them.

My experience at The California Grill was almost indescribable. Chef Jens and his staff were pampering to say the least. He greeted me with a sample of the white asparagus he gushed about, and I knew I was in for something special. The combinations of flavors and textures were to die for! I relished every bite and cleaned each and every plate that landed in front of me (highly unusual for me). The man knows how to make fresh food taste divine. The advice he gave in this interview is exactly what I, as your online Fitzness Trainer, want you to follow. Chef Jens just knows far better than I, how to make all of the healthy stuff taste heavenly.

Fitz: How much does "healthy" influence the foods you create for your menus?

Chef Jens: Healthy actually has a lot to do with our menu. First of all, Disney has set an initiative for enhancing our menus in a healthy way, so across all of the Disney parks and restaurants you'll find better choices. On my part, I'm always driven by what's fresh in the market. We create meals based on the season. At the California Grill, our menu changes according to what foods are in season. Fresh food equals leaner and "cleaner" food. I never use processed ingredients.

British man taken to court for lifting weights too loudly

Giran Jobe, a grunting weightlifter, had some disgruntled neighbors who felt he was too loud when lifting his weights. And, it turns out he probably was too loud, as he has now been fined, given a noise abatement, and taken to court.

Before you get too upset, you should know that the noise coming from his top floor flat was measured last June, and found to reach 100 decibels, the level of noise typically found at a rock concert. He was ordered to keep the noise down. Then, only a month later, the neighbors lodged another complaint, so the the Council implemented some noise recording devices.

Despise exercise? Learn the fine art of distraction.

There are two trains of thoughts out there. One that says to stay completely focused on every moment of your workouts to get the best out of it, and then there is mine. Mine says do whatever it is you need to do to accomplish your goal, make the time fly by, and allow your training to remain as enjoyable as possible so you continue to go back to it.

For example. I love exercise! In fact, I've made my career out of it. I'm also human. Sometimes my four mile jog just becomes freaking dull and if I don't have anything to take my mind off of the constant 'left, right, left, right' in my mind I would just be one more quitter in the world. So this is what little Miss Fitzness does to pursue her amazing goal of ultimate fitness. I get on the treadmill, stepper, gauntlet, rower, etc, completely armed. I bring an mp3 player, cell phone with ear piece, magazine, and then I usually set up in front of a T.V. At that point I set my magazine with many pretty pictures (think Cosmo or Glamour) on the machine and start to run. Then I choose my noise. Sometimes I chat, and sometimes I listen to music. Sometimes I talk on the phone, while looking at pictures and then check out the scroll on FOX News.

Does any of that make my workout suffer? Heck no! It allows me to complete it. All of these nonsensical distractions allow me to avoid any silly chatter in my head that would talk me out of finishing. In fact, usually I end up going harder than I planned, because I'm not bored to death! On the flip side, when I'm training for my sport, Full-contact Kickboxing, I'm 100% without interference. Fully focused. Ready for everything. If you are an athlete, I encourage you to do the same.

Red Cross gets slapped with $4.2 million blood fine

The American Red Cross is feeling the burn from a $4.2 million fine from violating laws which dictate blood safety (like not adhering to test procedures or failing to ask the right questions from donors).

In a sort of a reassuring way, the FDA says that there weren't any consequences of anyone being hurt from these infractions. Now the Red Cross has twenty days to respond, but stated that it "is committed to full compliance with the amended consent decree and all applicable federal regulations."

The good news is that the blood supply is perfectly fine, no one was hurt, and that your donated money won't be going toward paying off the fine. Since hospitals and other facilities rely on their blood so heavily, the Red Cross said they plan on paying the fine via operating funds (that is, selling blood products).
