Kim - a lot has been made about your degree in holistic nutrition. The NY Times called your school "an unaccredited school for alternative health." What do you have to say about that?

Kim: It was a decision I had to make when I was planning on going to school, and I knew that I wanted to learn a holistic way. I didn't want to pay money for my professors to tell me that meat and aspartame and dairy were healthy for me. I wanted to find a different way to approach that and teach people what I'm learning, and I didn't feel like I was going to learn anything like that the traditional route. If I hadn't taken the holistic program, I wouldn't have known where to even begin research for Skinny Bitch. So, I'm okay with it, I'm happy, and I stand behind what I learned and what I continue to learn. People want something new, a different way to learn about food.
