Our <a href="http://www.thatsfit.com/search/?q=CSA%20farm">CSA farm</a> closes up shop this week, a bit early due to the wet, wet summer; you should see the poor tomato plants. But the rain didn't ruin everything, as we have big, beautiful butternut squashes, just waiting to be cooked and gobbled up.<br /><br /><a href="http://whfoods.com/genpage.php?tname=foodspice&amp;dbid=63">Butternut squash</a> is loaded with vitamin A as beta carotene, vitamin C and fiber, along with B vitamins, so you really can't lose by making the most of your winter squash.<br /><br />One of our favorite dishes is a simple pizza with tomato sauce, roasted butternut squash, shallots and sage leaves, topped with prosciutto and feta cheese. My niece is an Environmental Science major in college right now. With all the new information she's learning, she recently decided to become a vegetarian because of the negative impact meat production has on the environment. Unfortunately, her new diet has consisted of pretty much nothing but pasta. She's subsequently feeling quite run down.<br /><br />She recently came home for a weekend, and her mother and I put our heads together to come up with easy, healthful recipes that will better meet my niece's nutritional needs. My niece and sister spent most of the weekend in the kitchen, and my niece went back to school with freezer containers filled with healthful, balanced meals. <br /><br />Several of the recipes they prepared contain edamame. Just a half cup of edamame has 10 grams of protein. <em>Shape</em> magazine has a <a href="http://www.shape.com/healthy_eating/recipes/29899639.html">recipe for Italian Edamame</a> that sounds absolutely delicious. The edamame is paired with brown rice, herbs, and other veggies such as zucchini, red bell pepper, tomatoes, and onion. You've got to try it. If you'd like to Zone in, here's the ratio broken down into blocks (e.g., units):<br /><br />
<ul>
    <li>1 block of Zone protein equals 7 grams of protein <br /></li>
    <li>1 block of Zone carbohydrate equals 9 grams of carbohydrates</li>
    <li>1 block of Zone fat equals 1.5 grams of fat<br /></li>
</ul>
From experience, you have to choose low-glycemic carbohydrates (typically vegetables and fruits) to stay in the Zone. Fill your plate with one-third protein (no bigger than the palm of your hand), two-thirds low-glycemic carbohydrates and a dash of heart-healthy fats. Eat too much high-glycemic bread/pasta and good luck hitting the Zone. One of my all-time favorite Zone meals is Mexicali Turkey Chili. This super-quick recipe yields six cups for a perfect ratio chili pot filled with 12 blocks of protein, 12 blocks of carbohydrate and 12 blocks of fat. I'm making this tomorrow to keep my metabolism humming at peak efficiency. In case you haven't heard, eating five to six small, healthy meals per day is the optimal way to increase your metabolism and lose fat using only dietary change. </em>
<p><em>What happened to three squares, you may be wondering? Nothing, really. They've just been split up into smaller meals.</em></p>

Heck, there's nothing wrong with being a little nutty if it comes from eating this tasty dish.<br /><br />Nuts, mushrooms, veggies, and fresh herbs make the bulk of this recipe, with eggs and a few this-and-thats. So healthy proteins and fats combined with the nutrients of onions, leeks, carrots, and celery. Can it get any better?<br /><br />Just a few tweaks and we've got a vegetarian mainstay full of healthy perfection:<br />

    <li>Use wild mushrooms, not just white ones, to help boost your immune system.</li>
    <li>Use brown rice cooked in broth instead of rice pilaf.</li>
    <li>Instead of breadcrumbs, just pop a slice of sprouted grain bread in the food processor and use that for more nutrition and better digestion.</li>

I thought my grocery bills were high, but compared to my friend's bills, mine are chump change. Her grocery costs were literally triple what mine were. Considering we have similarly sized families, it was kind of shocking. <br /><br />In the end, we determined that the bulk of the savings is because her family eats a lot of meat and mine doesn't. It's not that my son and I eat 100% vegetarian meals every night -- we don't. But our meals have just a little meat, and larger amounts of grains and produce. Some ideas:<br /><br />

    <li><strong>Make meat stretch. </strong>Instead of cooking one chicken breast per person, make a package of chicken breasts spread over several meals. For example, one average-sized chicken breast is enough to feed three people if you serve enough veggies and grains with the meal. Use the remaining chicken for other meals such as a stir-fry or a cold chicken salad. You can apply the same principle with other meats as well. For example, a package of ground turkey can stretch into three meals for my family -- usually turkey burgers, lettuce wraps, and turkey chili with beans.</li>

That's another reason why salmon is tops on my list. It's so easy to cook ... you really can't go wrong. My favorite method is to drizzle it with just a tiny bit of olive oil, sprinkle some paprika on top, and grill it. The same method works in the oven, too. I usually pair it with some seasoned brown rice and steamed asparagus. <br /><em><br />Real Simple</em> has <a href="http://www.realsimple.com/realsimple/content/food/0,21770,1832894,00.html">eight salmon recipes</a> that are much more creative than my stand-by preparation method. <p>And if you ask Ray, the key to developing healthy eating habits in kids (in other words, how to get them to eat more veggies and less junk,) is by making healthy food cool. Says Ray: 'You can make vegetables cool to a kid if you're mixing them up with something a child likes. If a kid says "What's in there?" tell them, "It's boogers and dinosaur guts." Get a giggle out of them ... There are all sorts of ways to build healthy relationships with your children and food. You have to become more kid-like yourself. Think about what excites the child. It's your challenge and your job to make food cool, fun and an adventure for them.'</p>

Full of flavor and nutritious goodies, <a href="http://southernfood.about.com/od/greentomatoe1/r/bl61217d.htm">green tomato rice</a> may become the new "in" side dish using the popular unripe fruit.<br /><br />We don't want the trans fats that frying gives us, and bread crumbs have almost no nutritional value. OK, I admit it, I did the deed. But since these two recipes are so radically different, I thought it would be fun to do a comparison of the two recipes; surely you'll choose a favorite.<br /><br />The new <a href="http://www.101cookbooks.com/archives/quinoa-and-grilled-zucchini-recipe.html">quinoa and grilled zucchini recipe</a> has eggs, pine nuts, goat cheese and a tantalizing yogurt avocado dressing, all providing protein and other nutrients. The original recipe I posted has garbanzo beans as added protein.<br /><br />Most of the flavor in the original <a href="http://www.thatsfit.com/search/?q=quinoa">quinoa</a> recipe is provided by curry spices, like cumin, paprika and turmeric. In this new recipe, fresh cilantro dominates for a very different flavor. My friends told me we'd have lunch on the boat, so I had brought along some simple fare. Instead of keeping it simple, my friends attached a small grill to the back of the pontoon and grilled a fantastic lunch. In fact, they made so much that they filled a styrofoam cooler with the food and walked it through the shallows offering other boaters food from their floating restaurant. Needless to say, the other boaters were thrilled.<br /><br />Just as my friends wowed their water-loving comrades, you can wow your fellow football fans when tailgating. <a href="http://www.cookinglight.com/cooking/mp/outdoordining/slideshow/0,14401,-1838280-2,00.html">Cooking Light has four great menus for you to try. </a>You don't have to stick to hot dogs or cold sandwiches.
