Boneless, skinless chicken breasts get dressed up with a simple sauce of white wine and Dijon mustard -- the combination adds a tremendous amount of flavor to the dish, without an overload of fat, sodium or cholesterol.

The pan sauce from the chicken is wonderful over plain steamed couscous, but if you'd like something a little more elaborate, try Curtis Stone's Mint and Cumin Couscous, which contains antioxidant-rich (and flavorful) mint and orange zest, as well as cashews, which are a good source of healthy fat.
Two Bean Saute
In this recipe, green beans and snow peas are simply cooked in a little olive oil and water -- feel free to use just one of the vegetables if you'd prefer an even simpler side.
Oranges and Chocolate
After you've zested the oranges for the couscous, peel and segment them for dessert. If you'd like, add a couple of squares of dark chocolate (several studies have pointed to the health benefits of dark chocolate).
