Maple Lime Salmon With Cilantro Couscous

Ingredients:
Four 4-ounce salmon filets
3 tablespoons maple syrup
1 lime, juiced
1/2 cup whole-wheat couscous
1/2 cup cilantro, chopped
Pinch each salt and pepper
1 cup frozen broccoli, thawed and warmed in microwave
1 teaspoon olive oil
1. Place salmon on foil-lined cookie sheet. Mix maple syrup with lime juice and pour over salmon. Broil for 8 to 12 minutes, until salmon flakes with fork.
2. Bring 1 cup water to a boil and add couscous. Remove from heat, cover and cook for 12 minutes.
3. Stir in cilantro and serve with salmon and broccoli drizzled with olive oil.
