

Leftover Turkey Recipe Roundup

Thanksgiving is traditionally a day to splurge on your calorie count and enjoy family favorite foods in the company of your loved ones, but leftovers can make the gut-busting meals last up to a week. Here are some recipes to get you back on track with healthy eating habits while using up those turkey leftovers.
Turkey Quiche
My crust-less version uses chopped turkey mixed with broccoli, eggs, plain yogurt and a taste of gruyere cheese for a lower fat option that is great for breakfast, lunch, or even dinner!
Ingredients
1 teaspoon olive oil
2 tablespoons finely chopped onion
1 cup chopped fresh broccoli (or frozen)
1 cup chopped cooked turkey
1/2 cup shredded Gruyere cheese
3 eggs
1 cup skim milk
1/4 teaspoon salt
Instructions
1. Prepare pie dish by spraying with non-stick cooking spray. Preheat oven to 325 F.
2. Sautee broccoli and onion in a large skillet with 1 teaspoon olive oil. Stir frequently until vegetables are tender.
3. In a medium bowl beat eggs slightly along with the milk and salt.
4. Sprinkle broccoli and onion with the turkey and cheese into prepared pie dish.
5. Pour egg mixture over turkey, broccoli, onion and cheese. Bake in the oven for 25-30 minutes or until a knife inserted into the center comes out clean.
Serves: 6

Curried Turkey Salad
This is not your traditional turkey salad! I've spiced it up with curry powder and grapes for flavor and fiber while reducing the calories by using a combination of non-fat Greek yogurt and mayonnaise to hold it all together.
Ingredients
1/4 cup light mayonnaise
1/4 cup non-fat Greek yogurt
1 tablespoon yellow curry powder
2 cups cooked turkey breast, chopped
2 stalks celery, chopped
2 cup red grapes, halved
Salt and pepper to taste
Instructions
1. In a medium bowl mix together mayonnaise, yogurt, and curry powder.
2. Toss with turkey, celery, and grapes. Add salt and pepper to taste.
Serves: 4

Turkey Tortilla Soup
One way to give back the life to those leftovers is to go with spicy cuisine! This soup with a kick pairs cooked turkey with black beans, tomatoes, and corn tortillas to make a low-fat, high fiber soup that is sure to please.
Ingredients
2 teaspoons olive oil
1 small onion, diced
2 tablespoon chili powder
1/4 cup tomato paste
2 roma tomatoes, diced
1 quart homemade turkey broth or water
3 (6 inch) corn tortillas, cut into strips
1 cup turkey, diced
1/2 cup frozen corn
1/2 cup canned black beans, drained and rinsed
1/2 teaspoon salt
2 tablespoons chopped fresh cilantro
Instructions
1. In a large saucepan, sauté onion in olive oil until translucent. Add chili powder and cook until fragrant (about 30 seconds). Add tomatoes, tomato paste, and water or broth.
2. Once the soup is boiling, add turkey, corn, beans, and tortilla strips and continue to heat through. Add salt to taste.
3. Garnish with chopped cilantro.
Serves: 4
