Roasted Pork Tenderloin With Veggies and Mashed Cauliflower

4 ounce pork tenderloin
1 cup roasted carrots
1 cup zucchini slices
1. Place all ingredients in roasting pan.
2. Bake until pork is cooked through.
Mashed Cauliflower
1 cup hot, cooked cauliflower florets
1⁄4 cup fat-free milk, at room temperature
1⁄4 teaspoon chives, thinly sliced
1⁄4 teaspoon garlic powder
Salt and freshly ground black pepper to taste
1. Place the cauliflower in a blender or a mini food processor fitted with a metal blade. Combine the milk, chives and garlic powder in a small bowl.
2. Add the milk mixture to the blender and puree about 15 seconds, scraping down the sides with a small spatula halfway through. Season to taste with salt and pepper.
