When baking, I like to use coconut oil instead of crisco. The viscosity is about the same at room temp. So far, it's worked really well!

I often use unsweetened applesauce instead of butter or oil in some recipes when baking. The end results taste the same.

When making spring beans, I use low-sodium chicken broth instead of oil or butter..they are great!!

Speaking of chicken stock...I make my own and fill an ice cube tray with it. Same with veggie stock. Any time I need it, I just open the freezer and use what I need!

Replacing the oil and eggs in a chocolate box cake mix with 12 oz of coke zero. And a can of black beans (smooshed in the blender first) mixed with water in boxed brownies instead of the fat and eggs. Sounds weird but it yummy.

prune puree (Google how to make) replaces oil and shortening really well for most baking - especially makes great brownies with Splenda...tons of fiber, very moist and delicious. Also great for carrot & banana muffins.

I love using herbs and spices. I was raised in the south and everything was cooked with fat back/bacon, grease/ reused grease, and salt, salt, salt. Green beans I cook with a little onion and basil (no salt) yummy! Meat baked with herbs or grill on the stove. I will use a olive oil and herb marinate and brush lightly. Panko is good for coating if you want that crispy crunch on fish or chicken. Moderation if you go for the gusto is the key!

Bran flakes are good cheerios... I use Triscuits for my breading or whole wheat saltines..

Swap out applesauce evenly for oil in any recipe makes for moist and delicious without the fat. Swap whole wheat flour for half the white flour in most recipes. Swap honey for sugar, but add a pinch of baking soda and reduce other liquids in recipe by 1 tbsp for each 1/2 cup honey.
