Nichole, a 46-year-old graphic designer, says that even though she's managed to take weight off over the years, she was never able to get rid of her belly fat. To help her stick to the plan, she told everyone she knew that she was starting the Flat Belly Diet. "That way," she says, "there was no backing out." She even brought her Flat Belly dishes to a picnic! But instead of feeling deprived, she says she was happy to be eating much healthier food.

At first, she says, looking at 1,600 calories per day on the Flat Belly Diet, she didn't think she'd be able to stick with it. "But it wasn't hard because the food was so filling," she says. The most challenging aspect for Julie was changing her thinking about food and learning what was-and wasn't-healthy. Evelyn married late in life and, after living in New York City for many years (where staying slim wasn't a problem for her), she and her new husband moved to the suburbs. "For whatever reason, I let myself go," she says. "Completely." When she and her spouse moved back to the city, however, she wanted to return to her old weight-and decided to give the Flat Belly Diet a try.

She first thing she found was that she never felt hungry-and was surprised at some of the foods she could eat. "I adore nuts," she says. "I still can't believe that something so fattening can be so healthy!"
