Soy - So Many Reasons to Love It

That sounds like a lofty claim, but according to a recent report that Kristen told us about, the proof lies over the ocean in Japan. Consider this: 40 percent of Japanese people eat hearty amounts of soy every single day for breakfast in the form of Miso soup. Add to that the fact that Japanese people, on average, live a few years longer than us North Americans and are considered to be one of the healthiest populations in the world. Coincidence? I think not.
OK, miso soup for breakfast might not be your thing (I don't blame you!), but there are plenty of other ways to get your share of soy. Soy milk, for instance, is a great source of calcium. Tofu provides you with energy-boosting protein. And my personal favorite? Edamame beans make a delicious, nutritious and very low-cal snack.
