A good video with wonderful tips! I applaud your menu and your good sense. We are beef/cattle producers but we are also always concerned about good health and sound food practices. When making meatballs, I always add ground flax seed meal to the ground meat. And I use tons of veggies as I raise an enormous garden and do a lot of my own food preservation, including freezing, drying and canning.
I'd like to point out, though, that lean BEEF is also just as lean as bison and it can have less cholesterol and fewer calories than chicken, too. And natural beef is so very packed with good nutrition -- zinc, heme-iron, selinium, and minerals that are lacking in many other foods. Great for fighting obesity, and new research also points out that beef has CLA, which is good for fighting cancer. MUCH more nutrition in beef than most consumers realize and can be part of a sound, healthy, and diet-health conscious menu.
