Forget those gourmet recipes calling for a host of exotic ingredients. Don't ask me to peel grapes. I need healthy recipes with a few basic ingredients, maybe 15-20 minutes prep time and 30-minute cook times. I want to stay healthy and fit, yet our speedy lifestyle puts kitchen time on the back burner. Class, work and the soccer/piano/ballet bus driver duties never stop.I'm ever-attracted to cookbooks with simple and nutritious meals, and I just reviewed a fantastic new offering -- Fix-It and Enjoy-It! Healthy Cookbook by "The New York Times" bestselling author Phyllis Pellman Good, with nutritional expertise from Mayo Clinic. It's packed with over 400 easy to prepare, Mayo-approved recipes that taste great, too. The best part is checking out the nutritional information of each recipe -- saturated fat is always low, and there's plenty of protein and fiber.
Last week, I enjoyed the Chickpea-Stuffed Shells (just a can of chickpeas, don't be afraid), Herb Marinated Steak (my first at-home London Broil attempt ever), and Berry Parfait and Shirred Jumbo Eggs a la my husband/chef on Valentine's Day. I can't wait to try the Low-Fat and Still Good Fruit Cobbler with only a trace of fat -- heavenly. If you're on a cookbook hunt, Good's latest release is well worth the $24.95 price tag.
