Campbell's V8 soup - A review

Butternut squash soup is a Fall favorite of mine, and I often make enough to freeze so that we can enjoy it into the winter months. So when I saw a commercial for Cambell's V8 soup -- which includes a butternut squash variety -- I was intrigued. Can Campbell's match my homemade recipe? Is it really a healthy option?It was on sale, so I figured, "Why not?" I bought a box and served it to three family members for lunch yesterday. Here are some of their thoughts:
- "Sweet and creamy."
- "Pretty good."
- "I'd eat it again."
- "Not as good as yours." (That one from my husband. Smart guy.)
All in all, the reviews were pretty positive. But is it nutritious? Campbell's claims there's 1/2 cup, or one full serving, of vegetables in a cup of their V8 soups and promise no artificial ingredients or preservatives. In the butternut squash variety, there are 140 calories per one cup serving and two grams of fat, one of them saturated. Nothing alarming there. However, as is typical in canned soups, there's 750 mg of sodium, a whopping one third of the amount an average adult should eat in a day.
Overall, I think these V8 soups are a positive addition to the soup aisle but still have far too much salt. Good in moderation, but eating fruits and veggies in their whole form is a better way to score nutrition without adding the extra sodium to your diet.
