Walking the Walk: Day 1
Day 1: Everything new is always easy at the beginning, isn't it? I pile my morning bowl of cereal high with frozen blueberries for my first serving of the day. At snack, I chop up a red bell pepper to dip in some hummus. Lunch is a giant salad. The greens are a serving in themselves, but I also chop a cucumber from the garden to put on top to add to my veggie quota. Not adding protein was a mistake and by mid-afternoon, I'm hungry again. I toss back a handful of nuts, then remind myself that I've only had four servings of veggies so far today. I put my second handful back and grab an apple instead. At dinner, I saute a few cups of kale in some garlic and olive oil and eat it over brown rice. I'm stuffed. Grand total: seven to eight servings. Not too shabby.
