- You don't have to have a few ounces of fish for a lighter dinner. You can still have meat and potatoes -- try a healthed-up meatloaf and mash russet potatoes with low-fat milk or yogurt instead of cream (add parmesan for flavor and, better yet, add some pureed cauliflower for a nutritional boost).
- If you love tex-mex, try a burrito filled to the gills with chicken, black beans, salsa, grilled veggies, and guacamole.
