If your family celebrates Easter, you may find yourself with a refrigerator full of rainbow, hard-boiled eggs after this weekend. When the egg hunt and the basket-filling is over (be sure to follow food safety rules on on those egg hunts!), what can you do with all the eggs? The two most popular ways to use hard-boiled eggs are for egg salad sandwiches and, my favorite, deviled eggs. We know eggs offer protein and lots of nutrients all packed into a tiny package. So, how many calories are packed into two halves of a deviled egg?
A) 80 calories
B) 140 calories
C) 190 calories
D) 220 calories
For 2 halves of a traditional deviled egg made with mayonnaise, milk, mustard, and chives or paprika for garnish, the answer is B)140 calories. Realistically, this number would vary between 120 and 150 calories, depending on your recipe and the amount of filling in each egg. Curious about the fat content? On average, this portion size would add 13 grams of fat to your daily total.

WOW!! But I have to say that I look forward to those eggs that eventually become loaded up with mayo and ... well... whatever else...
That is the once a year treat, so I feel no concern, but thanks for sharing the info on the nutritional content. I'll remember that when I'm popping a few down my throat. .. and happy Easter. They're actually much better than my mother's secret chocolate chip cookies that get made on any occasion, so I fell a bit better..... but I'll be eating those too.... :-) good time for the gym..

Recipe!
This is not one of those I have measurements for, but rather mix as you like. You need:
Hard boiled eggs, halved and the yolks put in a separate bowl
Mayo, your choice of regular, lite, fat free, etc.
Dill pickles (or your favorite, this is mine) chop up as fine as possible without becoming puree
Paprika, to make it pretty. Otherwise, it's your pick
Mash up the yolks. Add mayo until it's the consistancy you like. Mix in the amount of pickle that suits your taste. Fill in the egg white halves. Sprinkle on a little paprika, and serve.
Yummy!

BEING A NEW DIEBETIC, I FIGURED IT WOULD BE HIGH..SO I WOULD JUST NOT LOAD THE FILLING WHEN MAKING DEVILED EGGS TO CUT DOWN ON SOME OF THE CALORIES AND THE FAT!! GOT TO USE THEM EGGS...HAPPY EASTER EVERYONE......

Yes they have some calories but eggs deliver some of the best nutrition that you can get. They have protein and all the esential vitamins except vitamin C. All packed into a tiny cost effective tamper evident package.

I don't add milk. Wonder what my recipe has as far as calories. Proteen is all good. Besdies what AM I suppose ot do with hard boiled eggs? We don't make them into eggsalad sandwiches, yuck.
I use, mayo, mustard, sweet relish, salt, pepper, papricka, sometimes italian seasioning and a lil of parmasian cheese.

If you add the very tip of a stalk of asparagus it makes the stuffed eggs so good. I also add chopped balck olives or dill relish MMMM

My ex-boyfriend made the best deviled eggs. He called them Deviled Egg Surprise. Before loading the egg with the creamy filling, he would put a small piece of jalepeno pepper in the bottom. It made a nice alternative.

try using the sliced egg in your chicken pot pie. it is really really good. just slice and add a layer to the pie it is great!

I never use mayonaise. I drain non-fat yogurt in a strainer, until it is mayonaise like in consistancy. I then add the finely chopped egg yolks, add brown mustard, add chopped dill pickle relish, add one packet of equal or artificial sweetener, mix to blend, and sprinkle with paprika. Since you are using Non-Fat Yogurt, you cut out the fat that mayonaise would have added. Also by using dill relish and equal, any sugar is cut down also.

Whatever your deviled egg recipe, one way to make it a little easier on yourself...toss all your ingredients in a glad bag and mash it all up with your fingers. Force all of the ingredients to the bottom and then roll the bag up like a piping bag and snip the corner and "pipe" the filling into your eggs. You can then just toss the bag in the trash. Your eggs looks nice and you just saved yourself some dishwashing.

Mmm, deviled eggs.
I have a total craving for these sometimes, and nothing else will do. They're something weirdly festive about them too, even though they're just eggs.
Use light mayo and it helps a bit.
