This article seems to base a lot of its comments on the fact that when flying a person is at "high altitude". This would be true if one were at 30,000 feet outside of the plane, less oxygen and atmospheric pressure. But in the plane passengers are in a pressurized cabin.
I'll agree that an airplanes environment is dryer than most of us are used to and that sitting for long periods of time will slow blood flow.
My dislike for airplane food comes from the taste not its digestive qualities. If I'm going to be on a flight that would serve a meal I eat before I leave the house and take some snacks with me.
