You Are What You Eat: Broccoli, highlight it or hide it

Broccoli. Love it or hate it, it is a Super Food, Folks, and something we should all be eating regularly. From lowering your cancer risk to simply getting a huge dose of vitamins A and C, there are a multitude of reasons to eat broccoli.

Now, you be the judge: Do you need to hide it so your family will eat it? Or can you highlight the wonderfully strong and distinctive flavor of broccoli and still get oooo's and ahhhh's at the dinner table? Either way, we've got easy and fun ways to incorporate broccoli into your meals. Read on . . .Highlight it!

Broccoli Salad -- Toss 3 cups raw or quick-steamed broccoli with 1 can of chick peas, 1/4 cup sliced green onion and 1 cup halved cherry tomatoes. Whisk together 3 TB lemon juice, 2 TB extra virgin olive oil, 2 TB tahini and 1/2 tsp. salt-free seasoning blend. Dress, toss and serve.

Pasta with Roasted Broccoli -- Roast chopped broccoli and any other veggies you like in a 400 degree overn for about 20-30 minutes, turning once. I change it up all the time and use red pepper, mushrooms, onions, garlic cloves, zucchini. Toss the roasted veggies with pasta and a balsamic vinaigrette, pesto and olive oil or red sauce. The roasted broccoli takes on an entirely different flavor that is completely delicious.

Broccoli stir fry -- Cook broccoli with the protein of your choice, and any other veggies you might like (onions, baby corn, carrots . . . ). Add a stir fry sauce, or mix soy sauce with an apricot fruit spread and some ginger and garilic. Add broth, white wine or water to desired consistency. Serve with brown rice.

Food process raw broccoli and . . .
- add to pasta sauce
- mix into meatballs or meatloaf
- mix into lasagna meat, or be brave enough to make it its own layer
- mix into ground beef or ground turkey and grill those yummy super-burgers
- use in falafel instead of parsley
- mix into soups (homemade or convenience, however you can sneak in that broccoli)
- bake into brownies, muffins, biscuits; use your imagination!
- stir into mashed potatoes
